‘Tis the season for COOKIES!

A couple of recipes I tried for the first time this year …

Chocolate crinkle cookies
personal, cookies, culinary delights
1/4 c butter, softened
2 T canola oil
1/3 c dark molasses
1 C packed brown sugar
1 large egg
2 t vanilla
1 1/2 c flour
1/2 c cocoa
1 t baking soda
1 t cinnamon
1/4 t salt

Preheat oven to 350 F.

In a large bowl, measure butter, oil, molasses and brown sugar. Add egg and vanilla. Stir until well blended and smooth.

In another bowl, mix together dry ingredients. Add dry ingredients to the molasses mixture and stir until you have soft dough. (recipe says do this by hand, but I have an awesome stand mixer, so I think hand mixing is for suckers.)

Put about 1/2 c sugar in a shallow dish. Roll the dough into balls about the size of a walnut and then roll the balls in the sugar to coat them well. (This is where children come in handy. Their small fingers are excellent for rolling things in sugar.)

Place the cookies about 5 cm apart on a cookie sheet (recipe says spray sheet with nonstick spray, but I used parchment paper.)

Bake for 12-14 minutes, until just set around the edges. Makes about two dozen cookies. (I doubled the recipe, ate some of the dough and came out with 48 cookies. So pretty close.)

Eggnog sugar cookies

1/4 c butter, softened
1 T canola oil
3/4 c sugar
1 large egg
1 t vanilla
1 2/3 c flour
1 t baking powder
1/2 t cinnamon
1/2 t nutmeg
1/4 t salt

In a large bowl, beat butter, oil and sugar. Add egg and vanilla and beat until mixture is smooth and light.

In another bowl, combine dry ingredients. Add to the sugar mixture and stir just until you have soft dough.

Shape dough into a disc, wrap in plastic wrap and refrigerate until well chilled.

Preheat oven to 350. Roll dough out on lightly floured surface until it’s 1/8″ – 1/4″ thick. Cut out using desired shapes. Transfer to cookie sheet that has been sprayed with nonstick spray (again, I used parchment paper). Bake 10-12 minutes, until pale golden around the edges.

When cool, decorate if desired.

Makes 2 dozen 2-3″ cookies.
